Munther bin Shekar Al Zaabi Director General of RAK Municipality declared that the Municipality issued 57 licenses for Ramadan tents which provide iftar to fasting people in the emirate. The licenses were issued, in cooperation with the competent authorities, after performing overall field inspection tournaments to ensure all security and safety conditions.

Al Zaabi highlighted the Municipality’s annual keenness to create appropriate conditions for Ramadan tents by providing the hygiene standards required to ensure safety for all.

He pointed out that Public Health and Safety Department, represented in Food Control Section, performs a strategic and performance task that is reflected in con- trolling food establishment, particularly in public kitchens during Ramadan. Such establishments products large amounts of food during the holy month. The Section team focuses on performing inspection campaigns and awareness courses before Ramadan to ensure the conformity of the establishment’s design and sequential path and improve the workers’ knowledge about the food safety culture.

The team will validate the conformity of meal cooking and preparation as well as ensuring the fulfillment of the conditions of controlling meal conservation temperature, personal hygiene, and other conditions.

Al Zaabi said that the inspection team’s tasks are limited to meeting the requirements of transporting food from public kitchens to tents as well as ensuring that meals are transported under the recommended temperature.

He emphasized that there are no special conditions for preparing meals in the public kitchens during Ramadan since such activity is a part of the public kitchen’s work and the validating of these kitchen conformity is per- formed through out the year. However, the cooking and preparation processes shall receive more attention during Ramadan. Al Zaabi added that licensing public kitchens should be upon requests from charities like Emirates Red Crescent and any establishment don’t fulfill the hygiene requirements will be eliminated.

He said that Food Control Section during Ramadan processes focuses on covering the operating busiest hours, since there are three shifts daily. The section adopts the inspection approaches based on risk assessment and collecting and analyzing samples in the food control lab to ensure their conformity to the standard specifications.
